Creamed Spinach with Cream Cheese

Ingredients

The spinach

  • 2 pounds baby spinach

The sauce

  • ½ cup unsalted butter
  • ¼ cup diced onion
  • 2 teaspoons minced garlic
  • 1 teaspoon sea salt
  • teaspoon cayenne pepper
  • 2 cups half and half
  • 8 ounces cream cheese, diced

For topping

  • to taste grated parmesan cheese
  • to taste fresh ground black pepper

Instructions

  1. Rinse the spinach well and add it to a large pan over medium-high heat in batches.
  2. Cover and steam the spinach for 3 minutes, then transfer to a colander and repeat with the remaining spinach.
  3. Once cool, press the spinach in a clean dish towel to remove excess water and chop it.
  4. Melt the butter in a saucepan over medium heat and sauté the onion for 5 minutes.
  5. Add the garlic, salt, and cayenne pepper, cooking for an additional minute.
  6. Pour in the half and half and cook for 3 minutes.
  7. Add the cream cheese and cook until melted, about 6 minutes, whisking often.
  8. Return the spinach to the pan and cook for 2 minutes, adjusting seasonings as needed.
  9. Serve topped with parmesan cheese and black pepper.
