Creamed Spinach with Cream Cheese

Instructions
- Rinse the spinach well and add it to a large pan over medium-high heat in batches.
- Cover and steam the spinach for 3 minutes, then transfer to a colander and repeat with the remaining spinach.
- Once cool, press the spinach in a clean dish towel to remove excess water and chop it.
- Melt the butter in a saucepan over medium heat and sauté the onion for 5 minutes.
- Add the garlic, salt, and cayenne pepper, cooking for an additional minute.
- Pour in the half and half and cook for 3 minutes.
- Add the cream cheese and cook until melted, about 6 minutes, whisking often.
- Return the spinach to the pan and cook for 2 minutes, adjusting seasonings as needed.
- Serve topped with parmesan cheese and black pepper.
