Creamed Spinach

Ingredients

The spinach

  • 12 oz bagged fresh baby spinach
  • 1 tablespoon water

The sauce

  • 1 teaspoon extra virgin olive oil
  • 1 clove garlic, peeled and minced
  • ½ teaspoon dried onion flakes
  • cup Neufchatel (light) cream cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon lemon juice
  • 2 turns freshly ground black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and onion flakes, sauté for 15 seconds.
  3. Add spinach and water, sauté for 1 to 2 minutes until most spinach is wilted.
  4. Remove from heat and stir in remaining ingredients until cheese melts.
