Fresh Creamed Spinach

Ingredients

The base

  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • ½ teaspoon fine salt
  • to taste freshly ground black pepper
  • a tiny pinch cayenne pepper (optional)

The greens

  • 16 ounces baby spinach

The flavorings

  • 4 cloves garlic, pressed or minced

The creaminess

  • 4 ounces cream cheese, cut into 1-inch chunks
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Melt butter in a medium Dutch oven over medium heat.
  2. Add onion, salt, pepper, and optional cayenne; cook until the onion is soft.
  3. Add spinach in handfuls, stirring until wilted.
  4. Add garlic and cook until fragrant.
  5. Stir in cream cheese and cook until melted and creamy.
  6. Add Parmesan and stir to combine, then season with additional salt and pepper if desired.
  7. Serve warm.
