Instructions
- Rinse and prepare the spinach, boiling it for less than 1 minute before shocking it in cold water.
- Drain and squeeze out excess water from the spinach, then chop it into small pieces.
- Melt butter in a skillet over medium-high heat, then sauté garlic and onion until golden brown.
- Stir in flour, then add milk and heavy cream, stirring until the sauce thickens.
- Lower the heat, add spinach, half of the shredded cheese, and salt, stirring until the cheese melts.
- Transfer the mixture to a baking dish, sprinkle remaining cheese on top, and broil for 3 to 5 minutes until golden brown.
