Ingredients

The spinach and aromatics

  • 1 pound fresh spinach
  • 1 tablespoon extra-virgin olive oil or unsalted butter
  • 1 chopped shallot
  • 2 cloves garlic
  • ¼ teaspoon sea salt

The sauce

  • ½ cup heavy cream
  • ½ teaspoon Dijon mustard
  • 1 tablespoon cornstarch
  • 2 tablespoons warm water
  • 2 teaspoons fresh lemon juice
  • to taste freshly ground black pepper

Instructions

  1. Heat 1 teaspoon of olive oil in a skillet over medium heat, add spinach in batches, and sauté until wilted.
  2. Transfer the spinach to a colander and squeeze out excess water.
  3. Wipe the pan clean and heat the remaining olive oil over medium heat, then add shallot and salt, cooking until soft.
  4. Stir in garlic and the sautéed spinach, then add cream, mustard, and cornstarch mixture, stirring to combine.
  5. Finish with fresh lemon juice, season to taste, and serve.
