Creamed Spinach

The spinach and aromatics

The sauce

Instructions
- Heat 1 teaspoon of olive oil in a skillet over medium heat, add spinach in batches, and sauté until wilted.
- Transfer the spinach to a colander and squeeze out excess water.
- Wipe the pan clean and heat the remaining olive oil over medium heat, then add shallot and salt, cooking until soft.
- Stir in garlic and the sautéed spinach, then add cream, mustard, and cornstarch mixture, stirring to combine.
- Finish with fresh lemon juice, season to taste, and serve.
