Instructions
- Remove thick stems from spinach and roughly chop the leaves.
- Melt butter or olive oil in a sauté pan over medium heat.
- Add shallots and a pinch of salt, cooking until translucent.
- Stir in garlic and nutmeg, cooking for about 30 seconds.
- Add half and half and cook until slightly thickened.
- Incorporate chopped spinach gradually, stirring until mixed in.
- Add whipped cream cheese and parmesan, then remove from heat.
- Season with salt, pepper, and lemon juice, then serve warm.
