Ingredients

The pastry and eggs

  • 1 sheet frozen puff pastry, thawed
  • 4 eggs

The vegetables

  • 1 small yellow onion, chopped
  • 1 cup chopped bell pepper
  • 1 cup asparagus pieces (1-inch pieces)

The seasoning and cheese

  • 2 tsp oil
  • 1 tsp Italian seasoning
  • 2 Tbsp grated Parmesan cheese
  • ¼ tsp salt
  • 2 Tbsp shredded mozzarella cheese
  • ¼ tsp crushed red pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Thaw the puff pastry and cut it into 4 squares.
  3. Place the squares on one side of a baking pan and prick the tops with a fork.
  4. In a bowl, toss the vegetables with oil, Italian seasoning, Parmesan cheese, and salt.
  5. Spread the vegetables on the other side of the pan and bake for 10 minutes.
  6. Make an indentation in the center of each pastry square and fill with vegetables.
  7. Sprinkle mozzarella cheese on top and crack an egg into each indentation.
  8. Sprinkle with crushed red pepper and salt, then bake for an additional 10 to 15 minutes.
