Tortilla Baked Eggs

Ingredients

The base

  • ½ Tbsp olive oil
  • 1 8" flour tortilla

The filling

  • 1 cup fresh spinach
  • 4 large eggs
  • tsp salt
  • tsp freshly cracked black pepper
  • ½ cup grape tomatoes
  • ¼ cup shredded cheddar
  • tsp crushed red pepper (optional)

Instructions

  1. Preheat the oven to 350ºF.
  2. Brush the inside of a round, 7-inch diameter oven-safe dish with olive oil and press the tortilla down into the dish.
  3. Roughly chop the spinach and add it to the bottom of the tortilla.
  4. Crack the eggs into the tortilla on top of the spinach and add salt and pepper.
  5. Slice the grape tomatoes in half and sprinkle them over the eggs, then top with shredded cheese.
  6. Bake for 20-25 minutes until the whites are set and the yolks are still jammy.
  7. Remove from the oven, slide out of the dish, slice into four pieces, and serve.
