Tortilla Baked Eggs

grape tomatoes

Instructions
- Preheat the oven to 350ºF.
- Brush the inside of a round, 7-inch diameter oven-safe dish with olive oil and press the tortilla down into the dish.
- Roughly chop the spinach and add it to the bottom of the tortilla.
- Crack the eggs into the tortilla on top of the spinach and add salt and pepper.
- Slice the grape tomatoes in half and sprinkle them over the eggs, then top with shredded cheese.
- Bake for 20-25 minutes until the whites are set and the yolks are still jammy.
- Remove from the oven, slide out of the dish, slice into four pieces, and serve.
