Tortilla Baked Eggs

Ingredients

The base

  • ½ Tbsp olive oil
  • 1 8" flour tortilla

The filling

  • 1 cup fresh spinach
  • 4 large eggs
  • tsp salt
  • tsp freshly cracked black pepper
  • ½ cup grape tomatoes
  • ¼ cup shredded cheddar
  • tsp crushed red pepper (optional)

Instructions

  1. Preheat the oven to 350ºF and brush a round, 7-inch diameter oven-safe dish with olive oil.
  2. Press the tortilla into the dish, folding the edges up the sides.
  3. Chop the spinach and place it at the bottom of the tortilla.
  4. Crack the eggs over the spinach and season with salt and pepper.
  5. Halve the grape tomatoes and sprinkle them over the eggs, then add the shredded cheese on top.
  6. Bake for 20-25 minutes until the whites are set and yolks are jammy.
  7. Remove from the oven, slide out of the dish, slice into four pieces, and serve.
