Tortilla Baked Eggs

Instructions
- Preheat the oven to 350ºF and brush a round, 7-inch diameter oven-safe dish with olive oil.
- Press the tortilla into the dish, folding the edges up the sides.
- Chop the spinach and place it at the bottom of the tortilla.
- Crack the eggs over the spinach and season with salt and pepper.
- Halve the grape tomatoes and sprinkle them over the eggs, then add the shredded cheese on top.
- Bake for 20-25 minutes until the whites are set and yolks are jammy.
- Remove from the oven, slide out of the dish, slice into four pieces, and serve.
