Southwest Tortilla Baked Eggs

Instructions
- Preheat the oven to 350ºF and brush olive oil inside a circular baking dish.
- Press the tortilla into the baking dish, ensuring the edges fold up the sides.
- Sprinkle half of the shredded cheddar cheese in the bottom of the tortilla.
- Dice the red bell pepper and add it on top of the cheese along with the diced green chiles.
- Crack the eggs into the dish on top of the vegetables and cheese, then season with salt and pepper.
- Top with the remaining shredded cheese.
- Bake for about 20 minutes until the whites are set and yolks are slightly liquid.
- After baking, spoon salsa over the eggs and sprinkle with sliced green onion.
- Loosen the edges of the tortilla with a knife and slide the baked eggs out of the dish, then cut into quarters.
- Serve hot and enjoy!
