Ingredients

The filling

  • 4 eggs eggs
  • ¼ teaspoon salt
  • teaspoon black pepper
  • 2 teaspoons minced fresh chives
  • ¼ cup shredded cheddar cheese

The wrap

  • 2 8-inch flour tortillas

For serving

  • to taste salsa
  • to taste sour cream

Instructions

  1. Preheat the oven to 200°F and prepare a baking sheet with parchment paper.
  2. Whisk together 2 eggs with salt and pepper in a bowl.
  3. Heat a non-stick skillet and coat it with non-stick spray.
  4. Add the egg mixture to the skillet and sprinkle with chives and cheese.
  5. Cook the eggs without stirring until almost set, about 2 minutes.
  6. Place a tortilla on top of the eggs and cook for an additional 30 seconds.
  7. Flip the tortilla and eggs together and cook until the eggs are fully set.
  8. Fold the tortilla into a burrito shape and toast it for about 30 seconds.
  9. Transfer the burrito to the baking sheet and keep it warm in the oven.
  10. Repeat the process with the remaining ingredients and serve with salsa and sour cream.
