Instructions
- Preheat the oven to 200°F and prepare a baking sheet with parchment paper.
- Whisk together 2 eggs with salt and pepper in a bowl.
- Heat a non-stick skillet and coat it with non-stick spray.
- Add the egg mixture to the skillet and sprinkle with chives and cheese.
- Cook the eggs without stirring until almost set, about 2 minutes.
- Place a tortilla on top of the eggs and cook for an additional 30 seconds.
- Flip the tortilla and eggs together and cook until the eggs are fully set.
- Fold the tortilla into a burrito shape and toast it for about 30 seconds.
- Transfer the burrito to the baking sheet and keep it warm in the oven.
- Repeat the process with the remaining ingredients and serve with salsa and sour cream.
