Instructions
- Whisk eggs with a pinch of salt until smooth and frothy.
- Melt butter in a skillet and cook eggs until almost set.
- Toast the tortilla over a flame or in a skillet until warmed and lightly browned.
- Slide the cooked eggs onto the tortilla.
- Add cheese, avocado, and cilantro on top of the eggs, then add hot sauce and sour cream if desired.
- Fold the sides of the tortilla over the filling and roll it up, then wrap in foil and let sit for a few minutes.
