Breakfast Burrito

Ingredients

The filling

  • 3 large eggs
  • 1 Tbsp. unsalted butter
  • 1 oz. coarsely grated sharp yellow cheddar cheese
  • ½ whole avocado
  • ¼ cup cilantro leaves and tender stems

The wrap

  • 1 12-inch flour tortilla

For serving

  • to taste hot sauce
  • to taste sour cream

Instructions

  1. Whisk eggs with a pinch of salt until smooth and frothy.
  2. Melt butter in a skillet and cook eggs until almost set.
  3. Toast the tortilla over a flame or in a skillet until warmed and lightly browned.
  4. Slide the cooked eggs onto the tortilla.
  5. Add cheese, avocado, and cilantro on top of the eggs, then add hot sauce and sour cream if desired.
  6. Fold the sides of the tortilla over the filling and roll it up, then wrap in foil and let sit for a few minutes.
