Breakfast Burrito

Ingredients

The filling

  • 1 tablespoon butter
  • 1 package Johnsonville Fully Cooked Breakfast Sausage Links, diced
  • 6 units eggs, beaten
  • to taste salt and pepper
  • ¾ cup shredded cheese (cheddar recommended)
  • 1 cup refried beans, warmed
  • ½ cup pico de gallo

The wrap

  • 6 units flour tortillas, warmed

Instructions

  1. Melt the butter in a large pan over medium heat.
  2. Add the eggs to the pan and cook for 2 minutes, stirring occasionally to scramble.
  3. Season the eggs with salt and pepper, then move to one side of the pan.
  4. Place the sausage on the other side of the pan and cook for 5 minutes until browned.
  5. Lay the tortillas on a flat surface and divide the beans among them.
  6. Layer the eggs, sausage, cheese, and pico de gallo on each tortilla.
  7. Fold one half of the tortilla over the filling and roll tightly, tucking in the ends.
  8. Serve immediately, or refrigerate or freeze for later use.
