Ingredients

The filling

  • ½ lb. Breakfast Sausage
  • 6 large Eggs
  • 12 pieces Tater Tots
  • ½ cup Pico De Gallo
  • 1 cup Mexican Shredded Cheese

The wraps

  • 4 large Burrito Wraps

Instructions

  1. Cook the sausage over medium heat until browned and cooked through.
  2. Prepare the tater tots according to package instructions until crispy.
  3. Scramble the eggs in a mix of olive oil and butter until fluffy and fully cooked.
  4. Soften the burrito wraps in the microwave under a damp paper towel for 30 seconds.
  5. Layer the filling in the center of the wrap: tater tots, eggs, sausage, cheese, and pico.
  6. Fold the sides of the wrap inwards, then roll and tuck the bottom to seal the burrito.
  7. Toast the burritos in a dry skillet over medium heat until crispy on all sides.
  8. Slice and serve.
