Instructions
- Whisk the eggs with a dash of cold water and a pinch of kosher salt, then set aside.
- In a large fry pan, cook the sausage over medium-high heat until browned, breaking it into chunks.
- Add cherry tomatoes, mushrooms, and green onion to the pan and cook until the tomatoes blister and mushrooms brown.
- Stir in the spinach and cook until wilted, then transfer the mixture to a bowl.
- Wipe the pan clean, spray with cooking spray, and heat on medium-high.
- Add the eggs and let them cook undisturbed until bubbling, then gently stir and fold until mostly cooked.
- Fold the sausage mixture into the eggs, then add mozzarella and fold until melted.
- Heat the tortillas in the microwave for 15 seconds, fill with the egg mixture, fold into burritos, and serve.
