Ingredients

The filling

  • 4 large eggs
  • 4 ounces mild Italian sausage
  • 10-12 pieces cherry tomatoes
  • 4 pieces brown mushrooms, sliced
  • 1 piece green onion, chopped
  • 1 cup spinach leaves
  • 4 slices fresh mozzarella cheese, torn

The tortillas

  • 2 pieces 6-inch flour tortillas

The seasoning

  • 1 pinch kosher salt

Instructions

  1. Whisk the eggs with a dash of cold water and a pinch of kosher salt, then set aside.
  2. In a large fry pan, cook the sausage over medium-high heat until browned, breaking it into chunks.
  3. Add cherry tomatoes, mushrooms, and green onion to the pan and cook until the tomatoes blister and mushrooms brown.
  4. Stir in the spinach and cook until wilted, then transfer the mixture to a bowl.
  5. Wipe the pan clean, spray with cooking spray, and heat on medium-high.
  6. Add the eggs and let them cook undisturbed until bubbling, then gently stir and fold until mostly cooked.
  7. Fold the sausage mixture into the eggs, then add mozzarella and fold until melted.
  8. Heat the tortillas in the microwave for 15 seconds, fill with the egg mixture, fold into burritos, and serve.
