Ingredients

The filling

  • 8 eggs eggs
  • ½ lb chorizo or breakfast sausage
  • 1 teaspoon taco seasoning
  • ½ cup shredded pepper jack cheese
  • ½ cup tomato, diced
  • ½ cup red onion, diced
  • 2 cups refried beans
  • 1 whole avocado, diced

The wrap

  • 6-8 8-inch flour burrito tortillas
  • 2 tablespoons butter

To serve

  • to taste sour cream
  • to taste salsa

Instructions

  1. Scramble the eggs in a skillet and season with salt and pepper.
  2. Cook the chorizo or sausage in the same skillet until fully cooked, seasoning with taco seasoning.
  3. Warm tortillas in the microwave until soft.
  4. Assemble the burritos by placing cheese, sausage, eggs, tomato, onions, and refried beans on the tortillas.
  5. Fold the tortillas around the filling tightly.
  6. In a skillet, melt butter and brown the burritos on each side for about 2-3 minutes.
  7. Slice in half and serve with salsa and sour cream.
