Instructions
- Beat the eggs in a bowl and set aside.
- Cook the chorizo in a skillet until browned, then keep warm.
- Sauté the hash browns in the skillet with oil and seasonings until cooked through, then keep warm.
- Cook the eggs in the skillet until nearly set, then cover and keep warm.
- Heat the tortillas until warm.
- Assemble the burritos by layering eggs, potatoes, cheese, sausage, pico de gallo, and avocado in each tortilla, then wrap tightly.
