Ingredients

The filling

  • 6 large eggs
  • 8 oz chorizo sausage
  • 1 Tbsp olive oil
  • 2 cups frozen O'Brien hash brown potatoes
  • 4 extra large flour tortillas
  • ¾ cup shredded Mexican cheese blend
  • 1 cup fresh pico de gallo
  • 1 whole avocado
  • to taste salt
  • to taste black pepper

For serving

  • to taste Mexican hot sauce

Instructions

  1. Beat the eggs in a bowl and set aside.
  2. Cook the chorizo in a skillet until browned, then keep warm.
  3. Sauté the hash browns in the skillet with oil and seasonings until cooked through, then keep warm.
  4. Cook the eggs in the skillet until nearly set, then cover and keep warm.
  5. Heat the tortillas until warm.
  6. Assemble the burritos by layering eggs, potatoes, cheese, sausage, pico de gallo, and avocado in each tortilla, then wrap tightly.
