Ingredients

  • 4 slices bacon
  • 3 tablespoons neutral oil
  • 6 ounces frozen hashed browns
  • 3 large eggs
  • ½ tablespoon unsalted butter
  • ¼ teaspoon kosher salt
  • 2 (10-in) burrito-size flour tortillas
  • ¾ cup shredded cheese
  • ¼ cup chunky salsa
  • to taste pickled jalapeño slices
  • ¼ each avocado

Instructions

  1. Preheat the oven to 400°F and bake the bacon for about 20 minutes until crispy.
  2. In a skillet, heat the neutral oil and cook the hashed browns for about 5 minutes on each side until golden brown and crispy.
  3. In a small nonstick pan, melt the unsalted butter and scramble the eggs with the salt to your desired doneness.
  4. Assemble the burritos by layering cheese, hashed browns, eggs, salsa, jalapeños, and avocado on the lower third of the tortilla.
  5. Roll the burrito tightly, tucking in the sides as you go.
  6. In the skillet, sprinkle cheese and sear the burrito seam side down until the cheese is crispy, then repeat on the other side.
  7. Cut the burritos in half and serve warm.
