Instructions
- Preheat the oven to 400°F and bake the bacon for about 20 minutes until crispy.
- In a skillet, heat the neutral oil and cook the hashed browns for about 5 minutes on each side until golden brown and crispy.
- In a small nonstick pan, melt the unsalted butter and scramble the eggs with the salt to your desired doneness.
- Assemble the burritos by layering cheese, hashed browns, eggs, salsa, jalapeños, and avocado on the lower third of the tortilla.
- Roll the burrito tightly, tucking in the sides as you go.
- In the skillet, sprinkle cheese and sear the burrito seam side down until the cheese is crispy, then repeat on the other side.
- Cut the burritos in half and serve warm.
