Ingredients

The filling

  • 8 oz. country sausage
  • 6 large eggs
  • ¼ tsp salt
  • ¼ tsp pepper
  • 6 oz. cheddar cheese

The tortillas

  • 6 medium flour tortillas

Instructions

  1. Cook the sausage in a skillet over medium heat until browned and crispy, then remove it from the skillet.
  2. Whisk the eggs in a bowl with salt and pepper.
  3. Shred the cheddar cheese.
  4. Add the whisked eggs to the skillet with the sausage grease and cook gently until set but still moist.
  5. Combine the cooked sausage and shredded cheese with the eggs in the skillet.
  6. Place about ½ cup of the mixture into each tortilla and fold them closed.
  7. Cook the quesadillas in the skillet over medium heat until the tortillas are brown and crispy and the cheese is melted.
  8. Slice each quesadilla into three pieces and serve.
