Instructions
- Cook the sausage in a skillet over medium heat until browned and crispy, then remove it from the skillet.
- Whisk the eggs in a bowl with salt and pepper.
- Shred the cheddar cheese.
- Add the whisked eggs to the skillet with the sausage grease and cook gently until set but still moist.
- Combine the cooked sausage and shredded cheese with the eggs in the skillet.
- Place about ½ cup of the mixture into each tortilla and fold them closed.
- Cook the quesadillas in the skillet over medium heat until the tortillas are brown and crispy and the cheese is melted.
- Slice each quesadilla into three pieces and serve.
