Simple Breakfast Quesadillas

Ingredients

The filling

  • 2 eggs eggs
  • cup cooked pinto beans or black beans
  • 1 pinch salt
  • 1 tablespoon chopped green onion
  • 1 tablespoon finely chopped cilantro
  • 1 tablespoon chopped pickled jalapeño (optional)

The quesadilla

  • 1 medium (8") whole grain tortilla
  • ½ cup grated sharp cheddar cheese
  • 2 teaspoons butter or extra-virgin olive oil
  • to taste hot sauce
  • to serve salsa or additional hot sauce

Instructions

  1. Whisk the eggs with hot sauce and salt, then add the beans and set aside.
  2. Melt butter in a skillet over medium heat, pour in the egg mixture, and cook until just set, stirring often.
  3. Transfer the egg mixture to a bowl and stir in green onion, cilantro, and jalapeño.
  4. In a separate skillet, warm the tortilla, then sprinkle half of the cheese on one half of the tortilla.
  5. Top the cheese with scrambled eggs and then the remaining cheese, folding the tortilla over.
  6. Cook the quesadilla until golden and crispy on both sides.
  7. Remove from heat, let cool slightly, slice, and serve with salsa or hot sauce.
