Simple Breakfast Quesadillas

The quesadilla

Instructions
- Whisk the eggs with hot sauce and salt, then add the beans and set aside.
- Melt butter in a skillet over medium heat, pour in the egg mixture, and cook until just set, stirring often.
- Transfer the egg mixture to a bowl and stir in green onion, cilantro, and jalapeño.
- In a separate skillet, warm the tortilla, then sprinkle half of the cheese on one half of the tortilla.
- Top the cheese with scrambled eggs and then the remaining cheese, folding the tortilla over.
- Cook the quesadilla until golden and crispy on both sides.
- Remove from heat, let cool slightly, slice, and serve with salsa or hot sauce.
