Ingredients

The filling

  • 4 oz. Monterrey Jack or Pepper Jack cheese, shredded
  • 1 can diced mild green chiles
  • ΒΌ bunch fresh cilantro, chopped

The quesadillas

  • 4 large eggs
  • 4 fajita size tortillas (8" diameter)

Instructions

  1. Drain the green chiles and mix them with the shredded cheese and chopped cilantro in a bowl.
  2. Cook the eggs using your preferred method.
  3. Spread a portion of the cheese and chile filling over half of each tortilla, then add an egg on top.
  4. Fold the tortillas in half to form a quesadilla.
  5. Cook the quesadillas in a skillet over medium heat until golden brown and crispy, flipping to cook both sides.
  6. Cut the quesadillas into triangles and serve hot.
