Southwestern Breakfast Quesadillas

Ingredients

The filling

  • 1 pound ground breakfast sausage
  • 1 small red bell pepper
  • 1 small white onion
  • 1 unit jalapeno
  • 6 unit eggs
  • ½ cup rinsed black beans
  • ½ cup whole kernel corn

The assembly

  • 4 large Old El Paso flour tortillas
  • 2 cups shredded Mexican-blend cheese

Optional

  • to taste unit salsa
  • to taste unit sour cream

Instructions

  1. Preheat the oven to 400°F.
  2. Brown the sausage in a large pan, crumbling it as it cooks, then set aside and reserve 1 tablespoon of grease.
  3. Sauté the bell pepper, onion, and jalapeno in the reserved grease until soft.
  4. Scramble the whisked eggs in the same pan until cooked, then set aside.
  5. On a baking sheet, lay out two tortillas and layer with cheese, scrambled eggs, bell pepper mixture, sausage, black beans, corn, and more cheese.
  6. Top with the remaining tortillas and bake for 8-10 minutes until the cheese is melted and tortillas are slightly crisp.
  7. Cut into sixths and serve with salsa and/or sour cream.
