Southwestern Breakfast Quesadillas

Instructions
- Preheat the oven to 400°F.
- Brown the sausage in a large pan, crumbling it as it cooks, then set aside and reserve 1 tablespoon of grease.
- Sauté the bell pepper, onion, and jalapeno in the reserved grease until soft.
- Scramble the whisked eggs in the same pan until cooked, then set aside.
- On a baking sheet, lay out two tortillas and layer with cheese, scrambled eggs, bell pepper mixture, sausage, black beans, corn, and more cheese.
- Top with the remaining tortillas and bake for 8-10 minutes until the cheese is melted and tortillas are slightly crisp.
- Cut into sixths and serve with salsa and/or sour cream.
