Ingredients

The filling

  • 16-24 ounces breakfast sausage
  • 1 cup small diced bell peppers
  • ½ cup small diced onion
  • 10 large eggs
  • 1 ½ cups milk
  • ¾ cup sour cream
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 30 ounces frozen tater tots

The assembly

  • 12-15 burrito size flour tortillas
  • 3-4 cups shredded cheese

Instructions

  1. Cook the sausage, peppers, and onions in a skillet until the sausage is no longer pink and the veggies are tender.
  2. In a bowl, whisk together eggs, milk, sour cream, salt, and pepper until smooth.
  3. Grease a baking pan and layer the tater tots at the bottom.
  4. Spread the sausage and veggie mixture over the tater tots, then pour the egg mixture on top.
  5. Bake covered at 350°F for 30 minutes, then uncover and bake for an additional 25-45 minutes until set.
  6. Let the casserole cool before assembling the burritos.
  7. Scoop filling onto each tortilla, sprinkle with cheese, and roll them up.
  8. Serve warm or freeze for later.
