Easy Freezer Breakfast Burritos

Instructions
- Cook the sausage, peppers, and onions in a skillet until the sausage is no longer pink and the veggies are tender.
- In a bowl, whisk together eggs, milk, sour cream, salt, and pepper until smooth.
- Grease a baking pan and layer the tater tots at the bottom.
- Spread the sausage and veggie mixture over the tater tots, then pour the egg mixture on top.
- Bake covered at 350°F for 30 minutes, then uncover and bake for an additional 25-45 minutes until set.
- Let the casserole cool before assembling the burritos.
- Scoop filling onto each tortilla, sprinkle with cheese, and roll them up.
- Serve warm or freeze for later.
