Instructions
- Melt butter in a skillet over medium heat.
- Whisk together eggs, water, and pepper or hot sauce, then add to the skillet.
- Scramble the eggs until fully cooked and transfer to a bowl.
- In the same skillet, cook the turkey sausage, crumbling it as it cooks.
- Add diced onion and bell pepper to the sausage and cook until tender.
- Remove from heat and combine the sausage mixture with the scrambled eggs.
- Place 1/3 cup of scrambled eggs, 1/4 cup of sausage mixture, and 2 tablespoons of cheese into each tortilla.
- Roll the tortillas tightly and wrap in aluminum foil.
- Freeze the wrapped burritos in a large Ziploc bag.
- To serve, defrost in the microwave and heat until hot.
