Instructions
- Heat olive oil in a skillet and cook onion until softened.
- Add garlic, sweet potatoes, red pepper, paprika, salt, and pepper; cover and cook until sweet potatoes are tender.
- Uncover and cook until moisture evaporates and sweet potatoes caramelize.
- Whisk eggs with salt and pepper; scramble in a separate skillet with olive oil until just cooked.
- Mix herbs into goat cheese if not using herbed cheese.
- Spread goat cheese on tortillas, then layer with eggs, black beans, and sweet potato hash.
- Wrap burritos tightly and cool to room temperature before freezing.
- To serve, microwave frozen burritos until warm or heat in an oven.
