Ingredients

Sweet Potato and Pepper Hash

  • 1 tablespoon extra-virgin olive oil
  • ½ sweet yellow onion diced
  • 2 cloves garlic
  • ¾ pound sweet potatoes, peeled and sliced into ½-inch cubes
  • 1 red bell pepper chopped
  • ¼ to ½ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground pepper

Scrambled Eggs

  • 8 eggs
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • 1 ½ teaspoons extra-virgin olive oil

Herbed Goat Cheese

  • 4 ounces goat cheese, at room temperature
  • ½ teaspoon dried basil
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried rosemary
  • ¼ teaspoon dried thyme

For Serving

  • 1 can (14 ounces) black beans, rinsed and drained
  • 8 8-inch whole grain tortillas
  • to taste hot sauce and/or salsa

Instructions

  1. Heat olive oil in a skillet and cook onion until softened.
  2. Add garlic, sweet potatoes, red pepper, paprika, salt, and pepper; cover and cook until sweet potatoes are tender.
  3. Uncover and cook until moisture evaporates and sweet potatoes caramelize.
  4. Whisk eggs with salt and pepper; scramble in a separate skillet with olive oil until just cooked.
  5. Mix herbs into goat cheese if not using herbed cheese.
  6. Spread goat cheese on tortillas, then layer with eggs, black beans, and sweet potato hash.
  7. Wrap burritos tightly and cool to room temperature before freezing.
  8. To serve, microwave frozen burritos until warm or heat in an oven.
