Ingredients

The base

  • 6 large eggs
  • 2 Tbsp butter

The mix-ins

  • 1 15oz. can black beans
  • 2-3 cups tortilla strips
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 handful fresh cilantro
  • to taste salt and pepper

Instructions

  1. Drain and rinse the black beans, letting them drain while preparing the rest.
  2. Whisk the eggs in a large bowl.
  3. Melt butter in a skillet over medium-low heat.
  4. Pour the eggs into the skillet and cook slowly, moving the edges towards the center until about 75% set.
  5. Season the eggs with salt and pepper.
  6. Add the drained beans and tortilla strips, gently folding them into the eggs.
  7. Spoon salsa over the mixture and sprinkle cheese on top.
  8. Cover the skillet and increase heat to medium, cooking for five minutes until heated through.
  9. Fold the mixture gently to incorporate the cheese and sprinkle cilantro on top before serving.
