Instructions
- Drain and rinse the black beans, letting them drain while preparing the rest.
- Whisk the eggs in a large bowl.
- Melt butter in a skillet over medium-low heat.
- Pour the eggs into the skillet and cook slowly, moving the edges towards the center until about 75% set.
- Season the eggs with salt and pepper.
- Add the drained beans and tortilla strips, gently folding them into the eggs.
- Spoon salsa over the mixture and sprinkle cheese on top.
- Cover the skillet and increase heat to medium, cooking for five minutes until heated through.
- Fold the mixture gently to incorporate the cheese and sprinkle cilantro on top before serving.
