Breakfast Burritos with Creamy Black Beans

Ingredients

Creamy Black Beans

  • 1 Tbsp. unsalted butter
  • 2 small cloves garlic, minced
  • cup finely chopped white onion
  • 1 can refried black beans (15.5 ounces)
  • ¼ tsp. cayenne
  • ½ tsp. cumin
  • cup sour cream
  • 1 Tbsp. Cholula or your favorite hot sauce

Hash Browns

  • 1 Tbsp. unsalted butter
  • 1 cup frozen hash browns
  • ½ tsp. seasoned salt
  • ½ tsp. garlic powder
  • ½ tsp. cracked black pepper

Eggs

  • 3 large farm fresh eggs
  • 2 Tbsp. milk (whole or 2%)
  • 1 pinch salt
  • 1 pinch cracked black pepper
  • cup shredded cheese (cheddar or pepper jack)

Burritos

  • 2 8 inch flour tortillas
  • to taste your favorite salsa

Instructions

  1. Melt butter in a saucepan and cook onion until tender, then add garlic.
  2. Add the refried black beans and mix until smooth, then stir in cayenne, cumin, sour cream, and hot sauce.
  3. In a skillet, melt butter and cook hash browns with seasonings until crispy.
  4. Whisk eggs, milk, salt, and pepper, then scramble in a pan and mix in cheese until melted.
  5. Warm tortillas in the microwave, then spread black beans on each, followed by eggs and hash browns.
  6. Top with salsa, wrap the tortillas, and secure with a toothpick.
  7. Serve hot.
