Ingredients

Breakfast Burrito Ingredients

  • 2 small tortillas
  • 4 eggs scrambled
  • 1 avocado diced or sliced
  • ¼ cup shredded cheddar cheese
  • optional salsa

Black Beans Ingredients

  • 2 tsp olive oil
  • ¼ cup chopped red onion
  • ¼ cup diced red bell pepper
  • 1 clove garlic
  • 1 15 oz. can black beans
  • ½ tsp chili powder
  • ½ tsp oregano
  • ¼ tsp cumin
  • ¼ cup chopped fresh cilantro
  • ½ lime juice
  • to taste salt and pepper

Instructions

  1. Lay the tortillas flat and layer scrambled eggs, cheese, avocado, and black beans down the center.
  2. Roll the tortillas to close and serve warm.
  3. For the black beans, heat olive oil in a saucepan over medium-high heat.
  4. Add chopped onion and bell pepper, sauté for 5 minutes until soft.
  5. Add minced garlic and cook for an additional minute.
  6. Stir in black beans, chili powder, oregano, and cumin, and bring to a simmer.
  7. Reduce heat and cook for an additional 5 minutes.
  8. Remove from heat and stir in cilantro and lime juice, then season with salt and pepper.
