Instructions
- Lay the tortillas flat and layer scrambled eggs, cheese, avocado, and black beans down the center.
- Roll the tortillas to close and serve warm.
- For the black beans, heat olive oil in a saucepan over medium-high heat.
- Add chopped onion and bell pepper, sauté for 5 minutes until soft.
- Add minced garlic and cook for an additional minute.
- Stir in black beans, chili powder, oregano, and cumin, and bring to a simmer.
- Reduce heat and cook for an additional 5 minutes.
- Remove from heat and stir in cilantro and lime juice, then season with salt and pepper.
