Ingredients

Vegetables and Beans

  • 1 medium sweet potato, chopped
  • 1 medium potato, chopped
  • 1 medium red bell pepper, diced
  • 2 medium zucchinis, sliced
  • 1 15 oz. can black beans, drained and rinsed

Oils and Spices

  • 3 Tbsp avocado oil
  • 2 cloves minced garlic
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ tsp pepper

Eggs and Garnishes

  • 6 large eggs
  • ¼ cup chopped fresh cilantro leaves
  • 1 large avocado
  • 1 large lime, sliced

Cooking Essentials

  • 1 as needed oil or cooking spray

Instructions

  1. Preheat the oven to 425°F and grease a rimmed baking sheet.
  2. In a large bowl, combine the chopped potatoes, zucchini, bell pepper, and black beans with avocado oil and spices.
  3. Spread the mixture on the baking sheet and sprinkle with salt and pepper.
  4. Bake for 15-20 minutes until the potatoes are tender, stirring halfway through.
  5. Create 6 wells in the vegetable mixture and crack an egg into each well.
  6. Return to the oven and bake for an additional 7-9 minutes until the eggs are set.
  7. Garnish with avocado, cilantro, and a squeeze of lime before serving.
