Instructions
- Preheat the oven to 425°F and grease a rimmed baking sheet.
- In a large bowl, combine the chopped potatoes, zucchini, bell pepper, and black beans with avocado oil and spices.
- Spread the mixture on the baking sheet and sprinkle with salt and pepper.
- Bake for 15-20 minutes until the potatoes are tender, stirring halfway through.
- Create 6 wells in the vegetable mixture and crack an egg into each well.
- Return to the oven and bake for an additional 7-9 minutes until the eggs are set.
- Garnish with avocado, cilantro, and a squeeze of lime before serving.
