Potato, Egg & Bacon Sheet Pan Bake

Ingredients

The base

  • 2 medium sweet potatoes, chopped into bite-sized pieces
  • 3 medium Yukon-Gold potatoes, chopped into bite-sized pieces

The seasoning

  • 2 Tbsp avocado oil
  • 1 tsp garlic
  • ½ tsp onion powder
  • ¾ tsp paprika
  • ½ tsp salt
  • ½ tsp pepper

The protein

  • 6 large eggs
  • 1 8 oz. package of bacon, cut or torn into bite-sized pieces

The garnish

  • 8-10 leaves sage, torn into small pieces

The oil

  • to taste oil or cooking spray (preferably avocado oil)

Instructions

  1. Preheat the oven to 400°F and grease a rimmed baking sheet.
  2. In a large bowl, toss the chopped potatoes with avocado oil and spices until evenly coated.
  3. Spread the potatoes on the baking sheet and bake for 15 minutes, stirring once halfway through.
  4. Add the bacon pieces on top of the potatoes and return to the oven for 7 minutes.
  5. Create 6 nests in the potato mixture, spraying the bottoms with avocado oil.
  6. Crack an egg into each nest and bake for an additional 7 minutes.
  7. Remove from the oven and enjoy.
