Potato, Egg & Bacon Sheet Pan Bake

package of bacon, cut or torn into bite-sized pieces

sage, torn into small pieces

oil or cooking spray (preferably avocado oil)
Instructions
- Preheat the oven to 400°F and grease a rimmed baking sheet.
- In a large bowl, toss the chopped potatoes with avocado oil and spices until evenly coated.
- Spread the potatoes on the baking sheet and bake for 15 minutes, stirring once halfway through.
- Add the bacon pieces on top of the potatoes and return to the oven for 7 minutes.
- Create 6 nests in the potato mixture, spraying the bottoms with avocado oil.
- Crack an egg into each nest and bake for an additional 7 minutes.
- Remove from the oven and enjoy.
