Instructions
- Preheat the oven to 400 degrees.
- Line a baking sheet with parchment paper and spray with olive oil cooking spray.
- Place the cubed potatoes on the pan and season with salt and pepper, then spray the tops with cooking spray.
- Bake the potatoes for 20 minutes, flip them, and bake for another 10 minutes. Optionally, broil for 2 minutes for extra browning.
- Remove the pan and create nests in the potatoes for the eggs.
- Crack an egg into each nest and season with salt, pepper, and crushed red pepper if desired.
- Return the pan to the oven and bake for 5-8 minutes, depending on your desired yolk firmness.
- Top with avocado and serve.
