Ingredients

The base

  • 3 medium Russett Potatoes
  • 4 large eggs
  • ½ unit Avocado

Seasoning

  • to taste salt
  • to taste pepper
  • to taste Crushed Red Pepper

Cooking spray

  • 1 can Cooking Spray

Instructions

  1. Preheat the oven to 400 degrees.
  2. Line a baking sheet with parchment paper and spray with olive oil cooking spray.
  3. Place the cubed potatoes on the pan and season with salt and pepper, then spray the tops with cooking spray.
  4. Bake the potatoes for 20 minutes, flip them, and bake for another 10 minutes. Optionally, broil for 2 minutes for extra browning.
  5. Remove the pan and create nests in the potatoes for the eggs.
  6. Crack an egg into each nest and season with salt, pepper, and crushed red pepper if desired.
  7. Return the pan to the oven and bake for 5-8 minutes, depending on your desired yolk firmness.
  8. Top with avocado and serve.
