Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Chop the baby potatoes into quarters and place them in a large bowl.
- Dice the red pepper and yellow onion, then add them to the bowl with the potatoes.
- Drizzle the avocado oil over the vegetables and toss to coat.
- In a small bowl, mix together the smoked paprika, garlic powder, salt, and pepper, then add this spice mix to the potato mixture.
- Toss everything until well combined.
- Spread the mixture evenly on the lined baking sheet and place it in the oven.
- Bake for 20 minutes, stir the potatoes, and then bake for an additional 20-25 minutes or until crispy.
