Ingredients

The potatoes

  • 3 lb baby potatoes

The vegetables

  • 1 small yellow onion
  • 1 medium red pepper

The oil and spices

  • ¼ cup avocado oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Chop the baby potatoes into quarters and place them in a large bowl.
  3. Dice the red pepper and yellow onion, then add them to the bowl with the potatoes.
  4. Drizzle the avocado oil over the vegetables and toss to coat.
  5. In a small bowl, mix together the smoked paprika, garlic powder, salt, and pepper, then add this spice mix to the potato mixture.
  6. Toss everything until well combined.
  7. Spread the mixture evenly on the lined baking sheet and place it in the oven.
  8. Bake for 20 minutes, stir the potatoes, and then bake for an additional 20-25 minutes or until crispy.
  9. Serve immediately.
