Ingredients

The potatoes and vegetables

  • 2 pounds red potatoes, quartered
  • ½ small red onion, chopped
  • 1 each red bell pepper, chopped

The seasoning and oil

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon paprika
  • to taste freshly ground black pepper

Instructions

  1. 1. Preheat the oven to 425°F.
  2. 2. Place the potatoes, onion, and red pepper on a baking sheet and drizzle with olive oil, tossing to coat.
  3. 3. In a small bowl, mix garlic powder, salt, and paprika, then sprinkle over the vegetables and toss again.
  4. 4. Season with black pepper to taste.
  5. 5. Roast in the oven for about 45 minutes or until the potatoes are crispy.
