Instructions
- 1. Preheat the oven to 425°F.
- 2. Place the potatoes, onion, and red pepper on a baking sheet and drizzle with olive oil, tossing to coat.
- 3. In a small bowl, mix garlic powder, salt, and paprika, then sprinkle over the vegetables and toss again.
- 4. Season with black pepper to taste.
- 5. Roast in the oven for about 45 minutes or until the potatoes are crispy.
- 6. Remove from the oven and serve warm.
