Instructions
- Preheat the oven to 400ºF.
- Wash and dice the potatoes into ½ to ¾-inch cubes and dice the onion into similar sized pieces.
- In a large bowl, combine the diced potatoes, onions, olive oil, smoked paprika, garlic powder, salt, and black pepper, and toss until well coated.
- Line a large baking sheet with parchment paper and spread the potato mixture in a single layer.
- Roast in the preheated oven for 40-60 minutes, stirring every 20 minutes, until the potatoes are brown and crispy.
- Taste and adjust salt if necessary, then serve hot.
