Ingredients

The potatoes

  • 4 medium russet potatoes

The seasoning and other ingredients

  • 1 small white or yellow onion
  • ¼ cup salted butter
  • 1 teaspoon smoked paprika
  • to taste freshly ground pepper
  • to taste kosher salt
  • 10-20 dashes Tabasco sauce

Instructions

  1. Bring a medium-large pot of water to a boil.
  2. Cut the potatoes into ¼"-½" cubes.
  3. Add the potatoes to the boiling water and cook for about 5 minutes until slightly softened.
  4. Drain and rinse the potatoes in cool water.
  5. Heat a large skillet over medium heat and melt the butter.
  6. Add the diced onion and cook until softened.
  7. Add the potatoes in a single layer and cook for 3-4 minutes without touching them.
  8. Sprinkle with paprika, salt, pepper, and Tabasco sauce.
  9. Flip the potatoes carefully and cook for another 3-4 minutes.
  10. Test for doneness and adjust seasoning if necessary.
  11. Serve immediately.
