Instructions
- Preheat the oven to 400ºF.
- Dice the Idaho potatoes into 1-inch chunks and the onion and red pepper into ½-inch chunks.
- Transfer the potatoes and onion onto a baking sheet and set the red pepper aside.
- Drizzle the potatoes with olive oil and toss to coat.
- Mix the seasoning ingredients in a small bowl and sprinkle over the potatoes and onion, tossing to coat.
- Roast the mixture at 400ºF for 20 minutes.
- Add the red pepper and toss everything together, then roast for an additional 15 minutes.
- Check the potatoes with a fork; if they are almost done, broil for 2-5 minutes for extra crispiness.
