Ingredients

The Potatoes

  • 4 medium/large Idaho potatoes
  • ½ large white onion
  • 1 large red bell pepper
  • 2 tablespoons olive oil

The Seasoning

  • ½ tablespoon garlic powder
  • ¼ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • ½ teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 400ºF.
  2. Dice the Idaho potatoes into 1-inch chunks and the onion and red pepper into ½-inch chunks.
  3. Transfer the potatoes and onion onto a baking sheet and set the red pepper aside.
  4. Drizzle the potatoes with olive oil and toss to coat.
  5. Mix the seasoning ingredients in a small bowl and sprinkle over the potatoes and onion, tossing to coat.
  6. Roast the mixture at 400ºF for 20 minutes.
  7. Add the red pepper and toss everything together, then roast for an additional 15 minutes.
  8. Check the potatoes with a fork; if they are almost done, broil for 2-5 minutes for extra crispiness.
