Ingredients

The potatoes

  • pounds russet or yukon potatoes

The seasoning

  • ¾ teaspoon salt
  • 1-2 teaspoons paprika
  • ½-1 teaspoon creole cajun seasoning
  • 1 tablespoon granulated garlic

The fat

  • 3 tablespoons melted butter or extra-virgin olive oil

The vegetables

  • 1 green bell pepper chopped (optional)

Instructions

  1. Preheat the oven to 425°F.
  2. Scrub, peel, and cut the potatoes into medium-sized cubes.
  3. Drain the potatoes and place them in a large bowl.
  4. Season the potatoes with salt, paprika, creole seasoning, garlic, and bell pepper if using.
  5. Add the melted butter or olive oil and mix everything together.
  6. Spread the potatoes in a single layer on a baking sheet.
  7. Bake for 20-25 minutes, flipping every 10 minutes until browned and crispy.
  8. Serve immediately.
