Ingredients

The potatoes

  • 1 ½ pounds red or Yukon gold potatoes

The vegetables

  • 1 cup chopped onion
  • ½ cup chopped red pepper
  • ½ cup chopped green pepper
  • 3 cloves garlic, finely chopped

The seasonings

  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • ¾ teaspoon sea salt
  • ½ teaspoon ground black pepper

The oil

  • 1 drizzle your favorite roasting oil or broth

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Dice the potatoes into uniform pieces.
  3. Combine all ingredients on a parchment lined baking sheet and mix well.
  4. Spread the mixture evenly on the baking sheet.
  5. Bake for 25 minutes.
  6. Increase the oven temperature to 500°F (260°C) and bake for an additional 10-15 minutes, checking for crispness.
  7. Serve and enjoy!
