Ingredients

The potatoes

  • 1 ½ pounds red or Yukon gold potatoes

The seasoning

  • 1 ½ tablespoons extra virgin olive oil
  • ¾ teaspoon garlic powder
  • ¾ teaspoon dried thyme
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 425ºF.
  2. Scrub the potatoes under running water and pat them dry.
  3. Cut the potatoes into roughly 1-inch cubes.
  4. Transfer the cut potatoes to a large baking sheet.
  5. Drizzle the potatoes with olive oil and sprinkle with garlic powder, thyme, salt, and black pepper.
  6. Toss the potatoes until they are evenly coated.
  7. Spread the potatoes out into a single layer with cut-sides touching the pan.
  8. Bake at 425ºF for 20 minutes.
  9. Flip the potatoes and bake for an additional 10 minutes or until fork-tender.
  10. Serve warm and enjoy.
