Oven Roasted Red Potatoes

Instructions
- Preheat the oven to 425°F (218°C).
- Scrub and clean the potatoes, then cut them in half.
- Place the potatoes in a saucepan with water and about ½ teaspoon salt, and bring to a boil.
- Reduce heat to a simmer and cook until the edges are tender, about 6-7 minutes.
- Drain the water and let the potatoes dry for about 1 minute.
- In a small pan over medium-low heat, combine olive oil, minced garlic, and Creole seasoning, stirring for about 30 seconds to a minute.
- Let the mixture sit for about 5 minutes.
- Toss the parboiled potatoes with the garlic oil mixture until well coated.
- Line a baking sheet with parchment paper and spread the seasoned potatoes in a single layer.
- Bake for 25-40 minutes, flipping every 5-10 minutes until evenly browned and crispy.
- Remove from the oven, add more seasoning to taste, and serve immediately.
