Ingredients

The potatoes

  • 2-2½ pounds small red potatoes or white

The seasoning

  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon Creole seasoning
  • 2 tablespoons minced garlic
  • 2 tablespoons minced parsley

Instructions

  1. Preheat the oven to 425°F (218°C).
  2. Scrub and clean the potatoes, then cut them in half.
  3. Place the potatoes in a saucepan with water and about ½ teaspoon salt, and bring to a boil.
  4. Reduce heat to a simmer and cook until the edges are tender, about 6-7 minutes.
  5. Drain the water and let the potatoes dry for about 1 minute.
  6. In a small pan over medium-low heat, combine olive oil, minced garlic, and Creole seasoning, stirring for about 30 seconds to a minute.
  7. Let the mixture sit for about 5 minutes.
  8. Toss the parboiled potatoes with the garlic oil mixture until well coated.
  9. Line a baking sheet with parchment paper and spread the seasoned potatoes in a single layer.
  10. Bake for 25-40 minutes, flipping every 5-10 minutes until evenly browned and crispy.
  11. Remove from the oven, add more seasoning to taste, and serve immediately.
