Instructions
- Preheat the oven to 425°F.
- Slice the potatoes in half or quarters.
- In a large bowl, combine halved potatoes, olive oil, garlic powder, sea salt, and black pepper, then toss to combine.
- Arrange the potatoes in an even layer on a rimmed baking pan.
- Bake for 40 minutes, flipping halfway through.
- Remove from the oven when the potatoes are fork tender and garnish with fresh herbs if desired.
