The potatoes

The seasoning

  • to taste fresh herbs (optional)

Instructions

  1. Preheat the oven to 425°F.
  2. Slice the potatoes in half or quarters.
  3. In a large bowl, combine halved potatoes, olive oil, garlic powder, sea salt, and black pepper, then toss to combine.
  4. Arrange the potatoes in an even layer on a rimmed baking pan.
  5. Bake for 40 minutes, flipping halfway through.
  6. Remove from the oven when the potatoes are fork tender and garnish with fresh herbs if desired.
