Ingredients

The potatoes

  • pounds baby red potatoes

The seasoning

  • ¼ cup olive oil
  • 2 teaspoons garlic, minced
  • teaspoons salt
  • ½ teaspoon pepper
  • 1 teaspoon Italian seasoning
  • ¼ cup finely grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • as needed spray cooking spray

Instructions

  1. Preheat the oven to 400°F and prepare a sheet pan with foil and cooking spray.
  2. In a large bowl, combine the halved potatoes with olive oil, garlic, salt, pepper, Italian seasoning, and parmesan cheese, tossing to coat.
  3. Spread the potatoes in a single layer on the prepared baking sheet.
  4. Bake for 35-40 minutes until golden brown and fork tender.
  5. Sprinkle with fresh parsley before serving.
