Ingredients

The potatoes

  • 2 pounds baby red potatoes or large red potatoes cut into chunks

The seasoning

  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary finely chopped
  • 2 teaspoons sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian parsley finely chopped (optional)
  • 2 teaspoons parmesan cheese or grated romano cheese (optional)

Instructions

  1. 1. Preheat the oven to 375°F.
  2. 2. In a small bowl, mix the fresh rosemary, sea salt, and black pepper.
  3. 3. Rinse the potatoes in cold water, pat them dry, and poke holes in them with a fork.
  4. 4. Place the potatoes in a baking dish or large bowl.
  5. 5. Add olive oil to the potatoes and toss to coat them.
  6. 6. Sprinkle the seasoning mixture over the potatoes and roll them around to season evenly.
  7. 7. Place the baking dish on the top rack of the oven and bake for 50-60 minutes until fork-tender.
  8. 8. Carefully remove the pan from the oven and transfer the potatoes to a serving bowl.
  9. 9. Garnish with chopped Italian parsley and grated cheese if desired.
