Ingredients

The potatoes

  • 2 pounds red-skinned new potatoes

The seasoning

  • 4 cloves garlic
  • 2 tablespoons chopped fresh rosemary

  • ½ teaspoon black pepper

The oil and cheese

  • ¼ cup olive oil
  • ½ cup shredded Parmesan cheese

Instructions

  1. 1. Preheat the oven to 400°F.
  2. 2. In a large bowl, mix potatoes, garlic, rosemary, salt, and pepper.
  3. 3. Drizzle with olive oil and toss to coat evenly.
  4. 4. Spread the potatoes on a rimmed baking sheet, cut-side down.

  6. 6. Sprinkle with cheese, toss to coat, and bake for an additional 10 minutes until the cheese melts.
