Ingredients

The potatoes

  • 2-2½ pound red or white potatoes

The seasoning

  • 2-3 tablespoon olive oil
  • ½ tablespoon minced garlic
  • 2 large sprigs rosemary, minced
  • to taste salt
  • to taste freshly ground pepper

Instructions

  1. Preheat the oven to 425℉/218℃.
  2. Scrub, rinse, and pat potatoes dry, then cut into large chunks and place in a large bowl.
  3. Season with salt and pepper, then add garlic and rosemary, tossing to combine thoroughly.
  4. Line a baking sheet with a baking mat or parchment paper and spread the potatoes in a single layer.
  5. Bake for 30-40 minutes, flipping halfway through, until evenly browned and crispy.
  6. Allow to cool slightly and serve warm.
