Ingredients

The potatoes

  • 1.5 lbs potatoes

The seasoning

  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary
  • ½ tsp salt
  • to taste freshly cracked pepper
  • 1 handful parsley, chopped (optional)

Instructions

  1. Preheat the oven to 400ºF.
  2. Wash the potatoes and cut them into 3/4-inch cubes.
  3. In a large bowl, combine the potatoes with olive oil, minced garlic, dried rosemary, salt, and pepper, and toss to coat.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast the potatoes for 15 minutes, then stir and roast for another 15 minutes.
  6. After 30 minutes, stir again and roast for an additional 5-10 minutes if more browning is desired.
  7. Serve hot, optionally garnished with chopped parsley.
