Rosemary Roasted Potatoes

Instructions
- Preheat the oven to 400ºF.
- Wash the potatoes and cut them into 3/4-inch cubes.
- In a large bowl, combine the potatoes with olive oil, minced garlic, dried rosemary, salt, and pepper, and toss to coat.
- Spread the potatoes in a single layer on a baking sheet.
- Roast the potatoes for 15 minutes, then stir and roast for another 15 minutes.
- After 30 minutes, stir again and roast for an additional 5-10 minutes if more browning is desired.
- Serve hot, optionally garnished with chopped parsley.
