Ingredients

The potatoes

  • 2 pounds Yukon gold potatoes and/or red potatoes

The seasoning

  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon garlic powder
  • ¼ teaspoon fine salt
  • 1 tablespoon finely snipped rosemary (optional)
  • 2 teaspoons finely chopped fresh parsley (optional)
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Cut the potatoes into even 2-inch chunks and place them on the baking sheet.
  3. Drizzle olive oil over the potatoes, then sprinkle garlic powder, salt, and rosemary if using. Toss to coat evenly.
  4. Arrange the potatoes in a single layer with flat sides down and roast for 40 to 45 minutes, stirring halfway through.
  5. Once golden and tender, stir in parsley if using, and season with additional salt and pepper before serving.
