Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Cut the potatoes into even 2-inch chunks and place them on the baking sheet.
- Drizzle olive oil over the potatoes, then sprinkle garlic powder, salt, and rosemary if using. Toss to coat evenly.
- Arrange the potatoes in a single layer with flat sides down and roast for 40 to 45 minutes, stirring halfway through.
- Once golden and tender, stir in parsley if using, and season with additional salt and pepper before serving.
