Instructions
- Step 1: Preheat the oven to 425°F and place a rack in the lowest position.
- Step 2: Halve the Yukon Gold potatoes crosswise.
- Step 3: Arrange the potatoes cut side down on a rimmed baking sheet and add enough water to cover the bottom.
- Step 4: Cover the baking sheet tightly with a double layer of foil to trap steam.
- Step 5: Bake the potatoes for 25-30 minutes until tender.
- Step 6: Let the potatoes cool for 5 minutes, then increase the oven temperature to 500°F.
- Step 7: Remove the foil, pour off the water, and drizzle olive oil over the potatoes, seasoning with salt and pepper.
- Step 8: Roast the potatoes for another 20-25 minutes until golden and crisp.
- Step 9: Let the potatoes cool slightly and use a spatula to unstick them from the baking sheet.
