Ingredients

The potatoes

  • 2 pounds medium Yukon Gold potatoes

The seasoning

  • ¼ cup extra-virgin olive oil
  • to taste Kosher salt
  • to taste freshly ground pepper

Instructions

  1. Step 1: Preheat the oven to 425°F and place a rack in the lowest position.
  2. Step 2: Halve the Yukon Gold potatoes crosswise.
  3. Step 3: Arrange the potatoes cut side down on a rimmed baking sheet and add enough water to cover the bottom.
  4. Step 4: Cover the baking sheet tightly with a double layer of foil to trap steam.
  5. Step 5: Bake the potatoes for 25-30 minutes until tender.
  6. Step 6: Let the potatoes cool for 5 minutes, then increase the oven temperature to 500°F.
  7. Step 7: Remove the foil, pour off the water, and drizzle olive oil over the potatoes, seasoning with salt and pepper.
  8. Step 8: Roast the potatoes for another 20-25 minutes until golden and crisp.
  9. Step 9: Let the potatoes cool slightly and use a spatula to unstick them from the baking sheet.
