Lemon Roasted Potatoes

Ingredients

The potatoes

  • 2 ½ lbs Yukon gold potatoes, cut into 1-inch pieces

The seasoning

  • cup olive oil
  • 1 ½ tsp dried oregano
  • Salt to taste
  • Pepper to taste

The flavoring

  • ¼ cup fresh lemon juice
  • 1 Tbsp minced garlic
  • 3 Tbsp minced fresh parsley

Instructions

  1. Preheat the oven to 400 degrees and prepare a baking sheet with non-stick spray.
  2. Place the potatoes on the baking sheet, drizzle with olive oil, and sprinkle with oregano, salt, and pepper, then toss to coat.
  3. Spread the potatoes in an even layer on the baking sheet.
  4. Roast the potatoes for about 30-35 minutes until nearly tender and lightly browned, tossing halfway through.
  5. Remove from the oven, drizzle with lemon juice, sprinkle with garlic, and toss to coat.
  6. Spread the potatoes back out in an even layer and roast for an additional 10 minutes until fully tender and golden brown.
  7. Sprinkle with parsley and serve warm.
