Lemon Roasted Potatoes

The potatoes

Instructions
- Preheat the oven to 400 degrees and prepare a baking sheet with non-stick spray.
- Place the potatoes on the baking sheet, drizzle with olive oil, and sprinkle with oregano, salt, and pepper, then toss to coat.
- Spread the potatoes in an even layer on the baking sheet.
- Roast the potatoes for about 30-35 minutes until nearly tender and lightly browned, tossing halfway through.
- Remove from the oven, drizzle with lemon juice, sprinkle with garlic, and toss to coat.
- Spread the potatoes back out in an even layer and roast for an additional 10 minutes until fully tender and golden brown.
- Sprinkle with parsley and serve warm.
