Ingredients

The Potatoes

  • 1 lb baby potatoes

The Oil Mixture

  • ¼ cup olive oil
  • 2 tablespoons butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon Italian parsley leaves, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • ¼ teaspoon salt
  • 3 dashes ground black pepper

Instructions

  1. Preheat the oven to 350°F (176°C).
  2. Cut slits in the potatoes without cutting all the way through.
  3. Mix all the ingredients for the oil mixture in a separate bowl.
  4. Place the potatoes in a roasting pan and brush them with the oil mixture, ensuring to coat the inside of the slits. Reserve some of the mixture for basting later.
  5. Roast the potatoes for 1 hour, basting with the remaining oil mixture at 30-minute intervals.
  6. Serve immediately after roasting.
